Paleo Bread

Recently I have been making Paleo Bread. why?

Well, I have been trying to avoid gluten and Gluten Free Bread is quite "dense" not "cushiony" so far (from my kitchen at least)

I don't eat much bread but sometimes it is really handy when you are really busy in the morning. some people might say "what are you so fuss about bread?" well, if you know what "gluten " does to you, you might change your attitude towards bread... anyways!

This bread was awesome and I add some chia seeds, and whop whop, they were nice and crunch!

Cooking time:35 min

Prep time:15 min

Ingredients :
2 and 1/3 cups of almond flour
1 cup of coconut flour
1 Tbsp RAW apple cider vinegar
1/4 tsp celtic salt ( I used pink salt)
1/4 cup flaxseed meal(ground flaxseed)
1 1/2 teaspoon baking soda
1/4 cup Coconut Oil
1 tablespoon of Honey
5 beaten eggs

(w Homemade Kiwi-Lemon Jam)

Key point for this bread would be "pulse the dry ingredients with food processor. if not, you will see "flat bread" which taste totally fine but texture would be quite dense .

Mix all the dry ingredients and add wet ingredients, and 165 Celsius for 35 minutes and

ENJOY your paleo bread. after cool it down, I rather sliced them and store them in the freezer since it is quite moist.

Why didn't I start making my own Granola!?

This recipe rocks. It might be too sweet but Kids would love this. and it is full of nutrients and It is yummy! Oats are gluten free, great source of energy,make you full.

What if Kids would like it, your husband like it and you would like it!

Jeff likes it - he is always honest about whatever I cook, and he told me this one is really good! yay!

I can't stop him eating cereal, but I can make healthy version of them , so He won't go out and buy factory packed cereal.

Once again, If I can make it , then you can too!

Prep time : 15 min
(soaking over night in advance oats and walnuts-to get rid of phytic acid which inhibits your absorption of food)

Cooking time: dehydration for 10~17hours ( so I use all my trays whenever I make something for long time- I made sun-dried tomatoes, some apples)

4 cups of gluten free Oats
2 cups of Walnuts
3 tsp Raw Honey
1/2 stevia
1 tsp Vanilla extract
1 Tbsp Cinnamon
4 mashed bananas for wet ingredients
2 Tbsp Goji berries
2 Tbsp dried apples

How to cook it

1. drain all the soaked ingredients and washed it again -really well

2, add all the ingredients together

3. mix them with your hands

4. dropped it on the dehydrator plate un evenly( it is better than spreading it)

5. dry it for 17hours ,40 degrees( you can raise the temperatures but I wanted to minimize the nutrient damage

6. when it comes out of the baking sheet, then it is ready!

7 serve it with almond milk or Hot water =-)

Yum! It is really yummy!

Try it at home if you have a dehydrator.
